Ingredients

  • 300g shrimp peeled
  • 1 ripe mango diced
  • 2 cups arugula
  • 1 cucumber sliced
  • 1 avocado sliced
  • 2 tbsp lime juice
  • 1 tbsp fish sauce
  • 1 tsp chili flakes
  • Fresh mint

Instructions

    Season shrimp with salt, pepper and chili flakes.

    Grill or pan-fry shrimp 2 minutes each side.

    Combine mango, cucumber, avocado and arugula.

    Whisk lime juice and fish sauce for dressing.
