Juicy grilled shrimp on a bed of mango, cucumber and arugula.
Ingredients
- 300g shrimp peeled
- 1 ripe mango diced
- 2 cups arugula
- 1 cucumber sliced
- 1 avocado sliced
- 2 tbsp lime juice
- 1 tbsp fish sauce
- 1 tsp chili flakes
- Fresh mint
Instructions

Season shrimp with salt, pepper and chili flakes.

Grill or pan-fry shrimp 2 minutes each side.

Combine mango, cucumber, avocado and arugula.
