These healthy breakfast stuffed peppers are filled with eggs, black beans, spinach, and cheese. They are colourful, protein-rich, and perfect for a nutritious weekend breakfast or meal prep.

- 2 large bell peppers
- 3 large eggs
- ½ cup black beans
- ½ cup baby spinach
- ¼ cup shredded cheddar cheese
- ¼ cup diced tomatoes
- 1 teaspoon olive oil
- ½ teaspoon cumin
- Salt and pepper

Cut the peppers in half and remove the seeds.
