Ingredients

  • 1 large cauliflower head
  • 2 eggs
  • 1 cup frozen peas and carrots
  • 3 spring onions
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic
  • 1 tsp ginger

Instructions

    Pulse cauliflower in food processor to rice-sized pieces.

    Cook eggs in wok scrambled, set aside.

    Stir fry garlic, ginger and vegetables 3 min.

    Add cauliflower rice, cook 5 minutes stirring often.

    Add eggs back, season with soy sauce and sesame oil.
