Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each)
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 cups broccoli florets, 2 medium carrots, sliced, 1 medium zucchini, sliced,
  • 1 red bell pepper, sliced, 1 tablespoon olive oil, Salt and black pepper to taste

    Prepare the Chicken: Pat the chicken breasts dry with paper towels. In a small bowl, combine olive oil, minced garlic, lemon juice, paprika, salt, black pepper, and Italian seasoning. Rub the mixture evenly over both sides of the chicken.

    Cook the Chicken: Heat a large skillet over medium heat. Add the seasoned chicken breasts and cook for about 6–7 minutes on each side, or until golden brown and nearly cooked through.

    Prepare the Vegetables: While the chicken cooks, toss the broccoli, carrots, zucchini, and bell pepper with 1 tablespoon of olive oil, a pinch of salt, and black pepper.
